Description

This is the little Minnesota variation on a Latin American staple side dish - we make a big batch of it at a time and keep some in the fridge or freezer all the time.

Ingredients

  red kidney beans, or "rk" beans
  short grain brown rice
  water
  sea salt
  evoo, or extra virgin olive oil
  spice

Instructions

Rinse beans, pour off rinsewater. Throw into pot to soak with water, covered til the next evening.

Get beans boiling, then set to simmer for an hour.

Put water on for rice, start it boiling, add beans & spices. Boil for an hour.

Serve
